Delicious, Yet Quick and Healthy – Taco Salad

Fair warning: this is taco salad minus the taco part. Sad, I know, but a lot healthier. This meal is great for lunch or dinner, but you should probably have a microwave available at work since it should be eaten warm. Or eat it cold, to each their own. This is my new favorite meal prep. It’s fresh and delicious, yet able to eat on the go.

I have been strictly counting calories lately to get vacation body ready this summer and this meal is perfect. Its only about 300 calories and has so many great foods in it. I use extra lean ground turkey and brown it with taco seasoning. I dice up onions and green bell peppers and brown those separately. You can choose whatever vegetables you like, make it more colorful with red bell peppers too. Steam the rice, steam the corn, and you’re good to go. I like to use Bird’s Eye Steamfresh Super Sweet Corn because you can microwave it in the bag. How simple is that?

Next, I mix it all together and split it all up into on-the-go containers. I like to add tomatoes the day of, but salsa works too. This makes it more summery and adds some freshness to the meal. I hope you like my newest creation as much as I do!
